PANCAKES


300ml (1/2pt) milk

100g (4oz) plain flour

1 egg

Salt

Oil


Sift flour and salt into a bowl.


Add egg and little milk and mix to a smooth batter.


Gradually add the remaining milk.


Leave to stand for 30 minutes.


Heat a heavy based frying pan.


Coat with a thin layer of oil using a brush or kitchen paper.


Add 2 tbsp batter to the centre.


Tilt and rotate to coat the base of the pan.


Cook for 1-2 minutes, until underside is golden.


Toss, or turn using a spatula or palete knife.


cook second side until golden.
