MERINGUE CUITE


100g (4oz) icing sugar

2 egg whites


Preheat oven to 70C/150F/GAS low.


Line a baking sheet with grease proof paper.


Put egg whites and sugar in a bowl over boiling water.


Whisk until mixture is stiff enough to hold a shape.


Remove from heat and whisk until cool.


Pour into a piping bag or spoon the mixture onto prepared baking sheet.


Bake for 1-2 hours or until crisp and firm but still white.
