Basic Brown sauce


BROWN SAUCE


450ml (3/4pt) well flavoured brown stock

20g (3/4oz) plain flour

3 tbsp oil

1 tsp tomato purée

1/2 celery stick

1 onion

1 carrot


Finely chop vegetables


Heat oil in a pan


Add vegetables and cook gently until soft


Stir in flour and cook slowly until browned


Stir and scrape flour from the base of the pan occasionally


Remove from heat


Gradually blend in stock


Return to heat and stir until sauce thickens


Partially cover and cook gently for 30 minutes


Strain to remove vegetables


Return to pan and cook for a further 5 minutes
